Meet Stephen Moore, the mastermind transforming the gelato scene. For more than 20
years, British-born Chef Stephen Moore has cooked in some of the world’s best fine-dining
restaurants, hotels, and resorts. His culinary career began in Perigord, France, followed by
stints in Switzerland and London at the prestigious Hyde Park Hotel. Chef Stephen further
honed his gastronomic skills in New Zealand and Australia, most notably at Sydney’s iconic
Rockpool. He also ventured overseas to work for the renowned Aman Resort in New Delhi
and the 3 Michelin-star El Racó de Can Fabes in Barcelona.
As co-owner and Group Executive Chef of Shelter Indonesia Group, Moore has crafted a
delightful array of gelato flavors that promise to enchant taste buds. Each gelato scoop
offers a velvety, creamy texture with perfectly balanced notes—rich in flavor but never overly
sweet.
NALU, meaning “wave,” beautifully captures its mission to bring a refreshing surge of
flavors. The true stars of NALU are its gelato creations, shining brightly with each scoop.
From timeless favorites like Pistachio, Salted Caramel, Cheesecake Strawberry, Ferrero,
and Mango Passion Fruit to delightful non-dairy options like Strawberry, Coconut Pineapple,
and Nutella Vegan, NALU offers a flavor for every palate.
At NALU, Chef Stephen’s culinary ingenuity extends beyond gelato. He has painstakingly
curated a range of delectable cookies that stand out on their own or when paired with soft
serve or gelato. The kitchen team at NALU’s ensures that the cookies and the gelato cones
are freshly baked daily, right in the store, guaranteeing a level of quality and freshness that is
second to none. Patrons can even witness this culinary magic in action, adding an extra

Chef Stephen has just unveiled an exciting lineup of new creations inspired by Bali’s vibrant
culinary scene. Patrons can now savor inventive delights like the Chocolate Cherry Ripe
Taco (mouthwatering gelato wrapped in a taco), S’more Hot Chocolate Bliss (a nostalgic
treat from childhood), Pistachio Brioche Ban, Citrus Bliss Brioche, and Croissant Cone
Sprinkle Swirl (an innovative croissant cone filled with soft serve). These delectable treats
promise to elevate the NALU experience to delightful new heights.
NALU brings double the delight with two vibrant outlets in Bali. The flagship store on Jalan
Batu Bolong, one of Bali’s trendiest spots, features a modern and playful design adorned
with cheeky knick-knacks. Designed by ZXC Studio, the space seamlessly blends Bali’s
island spirit with an urban laboratory aesthetic, creating a captivating backdrop for both
dessert enthusiasts and streetwear aficionados.
Guests can also explore a boutique corner
by Ageless Galaxy, Jakarta’s homegrown lifestyle brand inspired by outer space exploration.
This marks the first Ageless Galaxy store outside the capital, adding an extra touch of cool.
NALU’s second outpost is on Jalan Drupadi, charmingly situated on the ground floor of HUT
Café Seminyak. This cozy Seminyak spot is designed for quick grab-and-go treats, perfect
for those on the move who crave NALU’s delightful delicacies.
